Tunis markets this July brim with tomatoes, figs, zucchini and fresh herbs ready for five straightforward recipes that fit hot-weather eating.
July marks peak harvest for these items across the region, when daytime temperatures push residents toward lighter dishes that still deliver steady energy without heavy cooking. Local produce arrives at its freshest and cheapest right now, cutting reliance on imported goods and supporting shorter supply chains from nearby farms.
Shoppers at the Marché Central along Rue de la Commission and the stalls near Bab Souika find the best selection each morning, where vendors sort through crates of vine-ripened tomatoes and bundles of mint picked the previous day. The Institut National de Nutrition has run seasonal produce workshops in these neighborhoods since 2023 to encourage daily vegetable intake.
Ministry of Agriculture figures released in June show tomato prices at 1.8 dinars per kilogram and figs at 4.5 dinars per kilogram in Tunis markets, a drop from May levels that makes bulk purchases practical for most households. These prices reflect strong local yields after spring rains.
Tomato and mint salad starts with two kilos of chopped tomatoes tossed with a handful of torn mint leaves, a drizzle of olive oil from nearby groves and a pinch of salt. The dish sits ten minutes before serving to draw out juices.
Grilled zucchini rounds come from slicing three medium zucchini lengthwise, brushing them with oil and cooking them two minutes per side on a hot pan. Finish with lemon juice and a sprinkle of dried oregano bought at the same market.
Fig and walnut bites require six fresh figs halved and topped with crushed walnuts plus a thin spread of local goat cheese. Arrange on a plate and serve as a quick snack or light dessert.
Herbed couscous salad uses one cup of cooked couscous mixed with diced tomatoes, chopped parsley and a few olives from the Central Market. Add a simple dressing of lemon and oil for a complete midday meal.
Date and almond energy squares combine eight pitted dates with a handful of almonds in a food processor, then press the mix into a small tray and chill for twenty minutes before cutting into portions.
Residents who visit the Marché Central or Bab Souika stalls early this weekend can gather the listed items in one trip and test any of the five recipes the same day.
